Rubio’s New Ancho Citrus Shrimp Burrito
Last week I took the family out to Rubio’s so that I could try their new Ancho Citrus Shrimp Burrito. The pictures I saw looked really appetizing so I thought I’d try it for myself. It turns out that the real thing tastes as good as it looks!
Upon first appearances it didn’t look like there was any shrimp in my burrito at all. Just rice, beans and Guacamole.. So I took a bite and shortly discovered why I was so excited to try this burrito. It was tangy, a little spicy, hearty and filled with shrimp. Big, beautiful, plump, pink shrimp.
See!!!! Aren’t they pretty? They were perfectly pan seared and the guacamole, mixed with the creamy chipotle sauce and red tomatillo salsa really gave these shrimp a punch! It had almost a creamy texture to it. That combined with the lime juice and the citrus rice really made this burrito stand out!
My youngest son had the chicken Taquitos.. I was pretty impressed at how nice the presentation was. These fried little snacks came with a dollop of guacamole, pico de gallo, and cheese on a bed of lettuce. He ate all of them and was begging for more. It is a good thing he doesn’t like shrimp because it meant I didn’t have to share my burrito with him.
My oldest son got the Grilled Grande Bowl. It had marinated grilled chicken, Mexican rice, black beans, handmade guacamole, salsa fresca, jack, cheddar and cotija cheese ontop of shredded cabbage, drizzled with a creamy chipotle dressing. It was like a burrito but without the tortilla. He is thoroughly enjoyed it.
Lastly, my husband who eats gluten free ordered a Tilapia Salad. It was blackened to perfection and came with a mix of spring and butter lettuce, salsa and cheese. It was light and nicely balanced for him. The fish was flaky and tender and seasoned well.
We all were very satisfied at the end of our meals and we look forward to going back again soon. I know I will be ordering the Ancho Citrus Shrimp Burrito again..
