We have had some pretty crazy weather this past week in Orange County. One day it is raining and then next day it is 90 degrees. I personally love the rain and always crave a bowl of warm soup on those days so last week when it rained I ended up at Avila’s El Ranchito. Why, Avila’s do you ask? Why not Panera or Corner Bakery? Because Avila’s has the best soup in the world. Mamma Avila’s soup has huge chunks of chicken breast and rice garnished with fresh avocado, cilantro, onions and tomatoes.Served with a side of warm tortillas.

Another great menu item is the skinny enchiladas. These two enchiladas are served with all white meat chicken and lowfat cheese plus a side of beans and rice. Avila’s beans are so tasty and not pureed so they have a lot of texture and flavor.

In the mood for something a little lighter? Try their light tostada salad and ask them to go light on the lettuce or your meat to lettuce ratio will be off. Pair this with a skinny margarita and your day will be set!
