Mango Shrimp Avocado Salad with Clementines and Yogurt Blue Cheese Dressing
Tonight I was in the mood for a super light dinner so I tossed together a salad with some ingredients I had in my fridge. Turns out I make a pretty mean salad. I made a Mango, Shrimp, Avocado Salad with Clementines and some simply Dressed Blue Cheese Dressing from Marzetti.
Here are the ingredients you will need:
- Chopped Romaine
- Deveined Shrimp
- Avocado
- Clementines
- Mango
- Feta Cheese
- Simply Dressed Blue Cheese Dressing from Marzetti (Made with Yogurt)
Toss it all together and you will have a light, refreshing and really flavorful salad. I had never tried the Marzetti Blue Cheese dressing and it was really delicious. Since it is made with yogurt it was a little thinner and not as heavy as regular blue cheese dressing but it coated the lettuce nicely.
After I made this salad I saw a recipe similar to it that used 3 tbs of Lime Juice, 2 tbs of Canola Oil and 1 tbs of sugar for a dressing. I tried making it but it was too sweet. I like the creaminess of the blue cheese and I think you will too.
This dressing only has 2 grams of sugar, 3 grams of carbs, 2 grams of protein and 6 grams of fat. The cholesterol was 25 mg and the sodium is 260. Not terrific but not as bad as others.
