New Executive Chef at Splashes
Beautiful ambiance and incredible views are just two of the many features you will find at Splashes restaurant, located inside of the elegant Surf and Sand Resort in Laguna Beach. Recently. they acquired new executive chef Ron Fougeray and we were invited to dinner to try some of his new menu highlights.
We started off on the patio of 15FiftyFive with a fruity cocktail by the fire called the Revive. It was so nice to hear the waves crashing as we sat in front of the warmth from the fire. This would be a great place to take someone on a first date!
As we learned about Chef’s background and a little about his schooling we also sampled a watermelon beet Gazpacho. This chilled soup come with a grilled shrimp and a little goat cheese mixed in. This is perfect any time of the day as it is light and refreshing.
We moved from the patio to a nice oceanfront table at splashes and replenished our drinks. I decided to try a whiskey drink made with cherries. I don’t remember the exact name of it but it was incredible.
Chef had a pre-fixed menu for us and everything was the perfect size so we could taste everything without filling up too fast. First up was the Lobster Beignets. They were crispy , yet tender on the inside and I think this was my favorite item on the menu. i probably could have eaten another handful of these as it tasted like dessert. I will definitely be ordering these again.
Then came the crisp octopus served with Fingerling potatoes, fennel, serrano peppers, salsa verde, and lemon zest. I think I shocked myself as just how much I enjoyed this. It was not the least bit chewy, as a matter of fact it was tender and incredibly flavorful.
